Cheap and nasty hoki fillets. I just chopped them into very rough pieces once defrosted. No idea if I was even cutting them the right way Then slid them in, right off the chopping board. Once in the curry you try not to stir it around too much as they flake into pieces pretty easily. Definitely tasting a lot better after sitting around a bit and soaking up the flavours

Oh, this barely involved any fish skills. I just defrosted the fillets and slid them in at the end and let it cook for 5 mins…
