I got an old church community cookbook from my hometown to see if I could get any old regional heritage recipes from it, because all of my family’s recipes were destroyed in a fire. Almost half the recipes had jello as a major ingredient, and some other ones were real bangers like “baked fish with ritz crackers on top”. I could feel my skin turn a few shades whiter.
CHURCH'S CHICKEN SOUFFLE SALAD 1 pkg lemon jello ½ C mayonnaise 1 C hot water 2 Tbsp lemon juice ½ C cold water 1¼ tsp salt Dissolve jello. Beat all ingredients until well blended. Quick chill in freezer until firm 1" from edge. Beat until fluffy. Fold in: 1½ C diced chicken ½ C finely chopped celery ½ C toasted slivered almonds ¼ C chopped pimiento ¼ C chopped green pepper 1 tsp grated onion Chill and serve. Serves 6.
